Tocos with Tempeh


2 tablespoons olive oil
1 medium onion, finely chopped
1 clove of garlic, crushed
1 medium green pepper, finely chopped
250g tempeh, crumbled
400g tin tomato sauce
1 tablespoon chilli powder
salt and pepper to taste
200g mixed lettuce
200g cherry tomatoes
3 ripe avocados, peeled and diced
1 small tin of sweet corn
6 tacos


Heat the olive oil in a large frying pan. Add the onion and garlic and cook until soft. Add the bell pepper, tempeh, tomato sauce, chilli powder, salt and pepper. Cook over a low heat for 20 minutes and transfer to a serving dish. Everyone can make their own tacos using the tempeh mixture, lettuce, corn, cherry tomatoes and avocado.
